Breakfast (or brunch, depending on the hour) is my absolute favorite meal to cook and to eat. I appreciate the taste and versatility of eggs and the satisfaction of starting the day right.
Generally speaking, latin food is my favorite cuisine. Combine my favorite meal of the day with Colombian flare, carbs, and cafe con leche, and you have a soul-soothing breakfast as comforting as a hug from Madre (love you, Mom!). If you want to upgrade to next-level status, replace the buttered toast with a crispy arepa.
These are typically made with green onions, but I grew up eating them this way (thanks, Mom!). I prefer the sweetness of the sauteed yellowed onions, but if you're a purist or just love green onions, swap yellow for green.
- 1/2 large yellow onion, chopped
- 1 large tomato or 2 plum tomatoes, chopped
- 4 eggs
- olive oil
- salt & pepper
Heat olive oil in a pan and saute tomatoes and onions over medium heat for about 5 minutes. Scramble the eggs in a bowl and add salt & pepper. Pour the eggs in the pan over tomatoes and onions and scramble with a spatula until the eggs reach your preferred consistency. Enjoy!
